Chocolier Courses - April 10, 2025
On April 10, 2025, the new Chocolier Taster course will be held at Ferrarelle SB Spa, Milan, Via Giuseppe Ripamonti, 101, 20139, MI.
The course is designed to meet the needs of hospitality (bars, restaurants and hotels) and retail (stores, wine bars) operators, professionals (sommeliers, journalists, commercial intermediaries food and beverage tasters) and discerning consumers.
Topics and skills acquired:
- the sensory evaluation of chocolate
- perception: the brain and the functioning of the sense organs
- the tasting card: descriptors and their meaning
- the ecosystem of cocoa production
- cocoa: classification and cultivation
- the processing of cocoa pods and the obtaining of beans
- chocolate production technologies.
