After gaining experience at luxury establishments such as Hotel Okura Tokyo and Akasaka Ark Hills Club, Kenji opened Japan's first specialty chocolate shop in 1998. His iconic Premium Chocolate Cake has been recognized as the finest in Japan, winning first place in Tabelog’s chocolate store ranking for eight consecutive years. His shop has also received prestigious awards such as the Japan Gift Award and the Japan Sweets Award, making it a landmark in Japanese pastry art. Now, Kenji’s excellence meets Domori’s chocolate mastery, creating a unique collaboration that brings together the perfection of flavor and artisanal refinement.

In 2013, I decided to carefully review the ingredients I was using and that is when I discovered Domori chocolate. When I tasted the “Gateau au Chocolat 100% Criollo” made with Domori Chuao, I remain enchanted. I had never tried such chocolate before. It was like a great Bourgogne wine from a vineyard of excellence: an explosion of heady aromas and flavors.
The following year, in 2014, I had the pleasure of hosting Gianluca Franzoni, the founder of DOMORI, at my ‘Kens Cafe Tokyo’. Since then, DOMORI chocolate has become an indispensable ingredient for my gâteau.
